Oven BBQ Pork 

1 4-6 pound pork shoulder
6 tablespoons Pork Rub
2 tablespoons bacon fat
1 tablespoon olive oil
1 teaspoon Diamond Crystal kosher salt
2 cups General Use BBQ Sauce
1 white onion
6 cloves garlic
2 cups chicken stock 

Cover pork shoulder in pork rub

Heat cast iron pan over high heat add in two tablespoons bacon fat

Sear pork shoulder in cast iron pan on all sides 

Chop onion and garlic into a medium dice

Sweat the onion and garlic in olive oil and a pinch of Diamond Crystal kosher salt for 5 minutes

Pour in General Use BBQ Sauce and chicken stock and whisk together.

Return pork shoulder to pan and cover and simmer on medium-low for three hours, flipping the meat every hour

Shred pork shoulder and remove bones

Stir shredded pork shoulder together with the cooking liquid leftover in the dutch oven
